Apple Crisp Oatmeal Recipe

Is there anything that smells more comforting than apples and cinnamon frying on the stove?

I don’t think so.

This is a recipe Mister Man and I came up with last weekend, and it was so delicious that even those who don’t care for oatmeal asked for second helpings. Mister Man decided to name it Apple Crisp Oatmeal since it used the same ingredients :)

Mister Man’s Apple Crisp Oatmeal
(serves 6)
2 apples, cored and diced
2 Tbsp butter
cinnamon to taste
1/2 cup brown sugar
1/4 cup white sugar
Oatmeal – use whatever plain kind you like and cook according to package directions. I use Old Fashioned and cook on the stovetop.

Optional crisp topping:
1 cup uncooked oats
1/2 C sugar (white or brown)
1 Tbsp butter

Cook the oatmeal according to package directions.

In a large skillet melt butter over medium-high heat. Add apples and cook for about 10 minutes. Add cinnamon and sugar, mix well and cook for another 5 minutes. The apples will become very thick and the sugar will make a syrup.

Add apples and syrup to the oatmeal and stir together well.

You can eat it as is, but to make give it some extra love:

Place the mixed apple oatmeal into a greased cake pan. In a small bowl mix uncooked oats, sugar, and butter. Spread this topping over the cooked oatmeal. Bake in oven at 400 degrees for about 10 minutes.
