Calico Beans & Rice

We all know the drill…you’re low in funds so it’s beans and rice, rice and beans.

I happen to love beans & rice (and rice & beans) but after having it 3 times in 4 days, well, it can get old. Check out this recipe for the next time you’re tired of rice & beans, it’s unique tangy flavor will keep your taste buds happy and bellies full! If you’re anything like us you’ll be pleasantly surprised :)

Calico beans and rice

Calico Beans & Rice
Serves 8

2 Tbsp bacon grease
1/2 onion, diced
1 15oz can pork ‘n beans
3 cans various beans (I like pinto, navy & light red kidney)
1/2 C brown sugar
1 T mustard (use dark if you have it)
1 Tbsp white or cider vinegar
1/2 C ketchup
Warm, cooked rice

In a large pot melt bacon grease over medium-high and saute onions until translucent.

Add all of the ingredients in the order listed, stir well.

Bring to a boil, boil for 2 minutes, then reduce heat and simmer for 30 minutes.

Serve over rice

Workable substitutions:
Bacon grease – any oil will work. If you have bacon to spare (who am I kidding? Spare bacon?) you can cook, dice and add it.

Pork ‘n Beans – a can of red beans and 1/4 cup BBQ sauce

Brown sugar – 1/2 cup sugar and 2 Tbsp molasses, or use plain white sugar

Canned beans – Use dry beans that have been cooked and cooled, 2 3/4 C is pretty close to a can
