Our meals last week left me with a weird mix of leftovers. Mostly, I had some onion and 2 raw chicken breasts.
There isn’t a lot you can do with two chicken breasts in a family of 7. You can add it to a casserole I suppose, but that’s boring. You can make soup, sure, but it hasn’t exactly been soup weather this week in Florida. Then it came to me….”ahhhhhhh” (<-- that's the angels singing)
BBQ Chicken Pizza! And while I'm at it, why not carmelize the heck out of some onions too? The result was amazing, definitely a make-again dish.
And yes, I used - pizza crust. I know, I know. I cheated on myself. If it means anything I did make the bread sticks we had as a side from scratch. I also served a green salad as a side.
BBQ Chicken & Carmelized Onion Pizza
makes 2 pizzas
you need:
1-2 BLSL chicken breasts or thighs, sliced
1 bottle BBQ sauce
2 medium onions, sliced
oil for frying
mozzarella cheese
2 pizza crusts
Cook the chicken as you wish (we slice ours and saute it, but you could grill or boil it too). Toss the cooked chicken with about 1/2 C BBQ sauce and let it cool.
Add some oil to a heavy skillet and add the onion. Cook the onion down until it’s nice as brown, it may take up to 20 or 30 minutes depending on how much onion you use. Remove from heat and let the onions cool a bit.
Spread enough BBQ sauce on each pizza crust to cover the bottom. Layer the chicken, onion and cheese over the crusts.
Bake at 400 for 8-10 minutes, for a softer crust bake at 350 for 15-20 minutes.
