Dollar Store Recipes – Black Bean Wraps

Have you visited your local Dollar Tree lately? They have some pretty awesome stuff AND they accept coupons now!

You do have to be careful when comparing prices because sometimes the dollar store prices are more per ounce than the grocery store, but if you only have a few bucks to spend on a meal the dollar store is a great place to go!

What follows is a recipe I made this weekend, everything was from the Dollar Tree, and it was devoured by the entire family.

Black Bean Wraps
serves 6 ($.77 per serving)
1 package sausage* ($1)
1 package black beans & rice mix ($1)
1 package flour tortillas ($1)
1 can diced tomatoes ($.59)
1/2 cup sour cream ($1)

In a soup pot brown the sausage according to directions (remove from casing first, if applicable). Remove the sausage to cool. Cook the beans & rice according to package directions in the same pot.

Crumble the sausage into small pieces. Drain the tomatoes well. Add sausage, tomatoes, and sour cream to the cooked beans & rice.

Heat the flour tortillas in the microwave as directed on package. Spoon 1/2 cup or so of beans & rice into the center of each tortilla and wrap up burrito-style (check out the video below!)

Your wrap will be delicious but to bulk it up you can add some lettuce and shredded cheese. I like to top mine with a ton of hot sauce. A traditional Cuban black beans & rice skips the sour cream and is topped with drizzles of olive oil and red wine vinegar.

*The day I was at Dollar Tree there were several sausage options. Chorizo is my favorite but it’s not carried everywhere. Breatfast links, ground sausage, Italian links, or even a kielbasa-style sausage will work fine in this recipe. Bacon or ground beef would work too, if you want :)
