I was recently sent some coconut oil to try (more on that in another post), having never tried it before I figured hummus was a good dish to try it in as it’s pretty forgiving.
I decreased the quantity of my regular hummus recipe and use 1/2 coconut oil, 1/2 olive oil. The recipe is below, note that it does have a subtle coconut taste so adjust the oil ratio according to your preference.
Hummus with Coconut Oil (serves 2-3)
1 can garbanzo beans
2 tsp lemon juice
1.5 Tbsp olive oil
1.5 Tbsp coconut oil
3 Tbsp tahini
dash garlic powder
dash salt
dash black pepper
dash cumin
water
Add everything but the water to a food processor and process until very well chopped. Slowly begin adding water (very slowly) as you’re processing, until the hummus is the consistency you desire. Add more spices or oil if desired. Chill and serve with chips, bread, veggies or as a spread.
I'm going to have to try this. Except, you hit on that coconut taste thing. I don't like it, and i've never tasted my coconut oil, but i like the smell… does it taste like it smells?! LOL!!I think i'm out of lemon juice or i'd go try it "right now". I have lime juice… :D

You can easily replace the coconut oil with the traditional olive oil. Canola oil will work too and be very mild. If you like strong flavors try sesame or peanut oil!
