Hey all, I’m sorry for another “hit and run” article but it’s been a very, very busy week. I’m currently working on 3 projects that will hit the blog eventually but they’re pretty huge and involve….wait for it….sewing! Anyhow, I’ll give you a quick sneak peak at the end of this article as a thanks for sticking with me this week!

You all know how much I adore simple food, right? I spoken of my love for lentils, my feelings about beans, my reverence for rice…well today I sing an ode to the humble chickpea.

My friend Kitt introduced me to roasted chickpeas (HI Kitt! I miss you!) and I’m kinda hooked now. They’re super easy to make and don’t take much time, and my kids love them.

Making our snacks is probably the #2 way I am able to feed my family of 7 for around $500/month. This is one of our new favorite snack recipes.

Roasted Chickpeas

1 cup chickpeas (cooked & drained)
1 Tbsp olive oil
seasoning of your choice (I like dashes of cumin, cayenne, salt & pepper)

Mix everything in a bowl, transfer to a baking sheet and place under the broiler for about 8 minutes. Check them every few minutes to stir and make sure they’re not burning.

Viola! That’s it! You’re done!

    This looks great! I’ve always wanted to try roasted chickpeas. I wonder if my kids would like them. If not, more for me! Muahahahaha! :)
